in scenarios like these, triple extortion is your way to go, exfiltrate all then encrypt all, then get into personal threats, family, wife, relatives, calls, deepfakes, and physical damage. hire bunch of kids to to do stuff IRL at the offices etc etc.
the first rule in extortion is never let your fish feel safe if they don't follow your requests
